Elizabeth's Venison Chili

My mother, Elizabeth, is an excellent cook who developed this simple chili recipe that you can season to taste.

1 lb Broken Arrow Ranch Venison Chili meat
½ cup onion, chopped
2 tsp cooking oil
4 oz tomato sauce
2 cups water
1 tsp cumin
3 Tbsp chili powder (vary to taste)
1 tsp paprika
½ tsp salt
½ tsp red pepper
1 clove garlic
1 14.5 oz can tomatoes, chopped

Add the venison and onion to the oil, cooking over medium heat until venison is brown, Add the remaining ingredients, cover, and simmer about two hours or until the meat is tender (this will vary with heat – long and slow is better). Stir occasionally while cooking. Correct seasonings to taste. Thicken with one tablespoon of flour mixed with two tablespoons of warm water.
