Grilled Heart of Venison or Wild Boar
I've served grilled heart to the most cantankerous of hunting camp men and received rave reviews. Of course, they didn't know it was heart at the time but after learning the truth they still declared it good - and they didn't kick me out of camp.
Ingredients:
1 venison or wild boar heart (or more)
Olive Oil
Salt & Pepper
Directions:
Prepare a grill with high heat. This will be like cooking a steak. If you do not have a grill you can use your oven's broiler. It's just an upside down grill.
Trim the heart of all connective tissue inside and out. Click here for more directions on how to trim a heart. If possible, leave the heart in large pieces for cooking.
Lightly coat the heart with olive oil then season liberally with salt and pepper.
Place the heart on the hot grill and cook for about 5 minutes per side. You're aiming for a quick sear and rare to medium-rare inside.
Once cooked, thinly slice the heart and serve.
Grilled heart can be served with tortillas as tacos, as nachos or straight up as man camp meat appetizers.
