Hill Country Casserole

This recipe is a favorite at the ranch. Our kids just can't seem to get enough.

Ingredients
2 tblsp olive oil
1 onion, chopped
2 cloves garlic, chopped
1 Tbsp salt
1 tsp pepper
2 lb Broken Arrow Ranch Ground Venison
1 Tbsp chili powder
2 tsp ground cumin
1 tsp garlic powder
2 8-oz. cans tomato sauce
1 12-oz. package egg noodles
1 8-oz. package cream cheese, softened
2 cups sour cream
6 green onions, chopped
1/2 pound cheddar cheese, grated

Preheat oven to 350° F. In a skillet, sauté the onion then garlic in the olive oil. Add the meat to the skillet and brown. Add salt, pepper, spices and the tomato sauce. Simmer for 5 minutes.

Cook the noodles according to package directions. In a separate bowl, combine cream cheese, sour cream and green onions. Place noodles in a greased 13x9-inch casserole. Top with cream cheese mixture and then meat mixture. Sprinkle cheddar cheese on top. Bake, uncovered, about 30 minutes, or until hot and bubbly.

Serves 8.
