Venison-Vegetable Meat Loaf

This healthy recipe for venison meatloaf uses vegetables to keep it from drying out.

¾ cup oats 
1 small onion, minced 
½ tsp. Salt 
½ tsp. Pepper 
½ tsp. Basil 
½ cup V-8 juice 
2 egg whites
1 lb. Broken Arrow Ranch Venison Ground meat
1 ½ cups chopped or shredded vegetables such as carrots, zucchini, broccoli, or cooked greens

In a large bowl, stir oats, onion, salt, pepper, basil, and V-8. Let stand 5 minutes or until oats swell slightly. Add egg whites, venison, and vegetables. Mix well. In a greased shallow baking pan, shape into loaf. Bake in preheated 350° F. oven for 1 hour.
