Fettuccine with Wild Boar Italian Sausage and Spinach

Ingredients

2 Tbsp olive oil
-
2 cloves garlic, finely chopped

2 links Broken Arrow Ranch Wild Boar Italian Sausage (1 pkg)

16 oz baby spinach
-
16 oz dried fettuccine
-
1 cup pasta water (reserved)
-
3/4 cup finely grated Pecorino Romano, plus additional for serving

Salt & black pepper to taste
Directions
Heat oil in a large skillet over medium high heat until hot but not smoking. Cut casings away from sausage, discard casings, and crumble sausage into the hot pan. Cook sausage until browned, about 5 to 7 minutes, breaking it into roughly marble sized pieces as it cooks.
Add chopped garlic and spinach to the pan with sausage. Sauté mixture until spinach is wilted, about 5 minutes. Reduce heat and keep warm until pasta is finished cooking.
Meanwhile, cook pasta until al dente according to directions in salted boiling water. Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
Add ½ cup of pasta water to skillet with sausage mixture, stirring and scraping up any brown bits from bottom of skillet. Add pasta and remaining 1/2 cup reserved pasta water to skillet, tossing until combined. Stir in cheese, season with salt and pepper to taste. Serve immediately with additional cheese on the side.
Recipe Note
If the skillet is too small to hold pasta plus sausage mixture then the final steps can be done in the drained pasta pot.
