Recipe for flavorful, hearty bean and venison sausage chili.
Ingredients

1 Tbsp olive oil

1 pkg Broken Arrow Ranch Venison Smoked Sausage, halved lengthwise and sliced

1 large onion, diced

1 red bell pepper, diced
-
1 green bell pepper, diced
-
1 clove garlic, minced
-
1 Tbsp chili powder
-
2 tsp ground cumin
-
1 28-oz can crushed tomatoes
-
1 15-oz can black beans, drained, rinsed

1 15-oz can cannellini beans, drained, rinsed

1 15-oz can red kidney beans, drained, rinsed

1 Tbsp fresh lemon juice or white wine vinegar

Salt and black pepper, to taste

Sour Cream

Green onion, chopped

Fresh cilantro, chopped

Directions
Slice sausage in half lengthwise then cut into ½” slices to create bite sized pieces.
Heat oil in large saucepan over medium heat. Add sausages and brown on all sides, turning occasionally, about 5 minutes. Transfer sausages to plate to hold until later.
Add diced onion and bell peppers to pan. Saute about 5 minutes until softened. Add minced garlic and cook another minute. Add chili powder and cumin and cook while stirring until aromatic, about 30 seconds. Add crushed tomatoes and beans. Simmer 15 minutes to blend flavors.
Add sausage to chili and simmer 10 minutes, stirring occasionally. Add a bit of water or chicken stock, if desired, to get your desired thickness.
Stir in lemon juice or vinegar. Season to taste with salt and black pepper.
Serve chili in bowls topped with sour cream, green onion, and fresh cilantro.
